Brownie Swirl Cheesecake

1 - 8 oz. pkg. brownie mix

Grease bottom of 9" springform pan. Prepare basic brownie mix as directed on pkg. Pour evenly into springform pan.

2 - 8 oz. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs
1 c. milk chocolate, chocolate chips, melted

Combine cream cheese, sugar and vanilla. Mix at medium speed til well blended. Add eggs, one at a time. Pour over brownie layer. Spoon melted chocolate chips over cream cheese; cut through batter with knife several times for marbled effect. Bake at 350 for 35 minutes. Loosen cake from rim. Cool before removing. Chill. Serves 8 - 12.

Creamy Oatmeal

3 c. water
2 c. milk
3/4 tsp. salt
1/2 tsp. cinnamon, optional
1/2 c. raisins, optional
1 1/3 c. oatmeal
1/3 c. cream of wheat

Bring water, milk, salt, cinnamon and raisins to a boil. Add oatmeal and cream of wheat and cook approximately 5 minutes. Serve with brown sugar and milk.

Winter Salad

1 c. shredded cabbage
1/2 c. diced celery
1 c. diced apple
1 c. seedless grapes, cut in half
1 can drained pineapple tidbits

Dressing:

2 TBS lemon juice
2 TBS sugar
1/2 c. mayo.

Combine together and toss lightly.

Chocolate cake with chocolate frosting

Cake:
ingredients:
1 c. buttermilk
2 eggs (room temp.)
1/2 c. vegetable oil
1 t. vanilla
2 3/4 c. flour
2 t. baking soda
1 t. baking powder
1 t. salt
3/4 c. cocoa
2 c. sugar
1 c. coffee




Stir together dry ingredients (flour, salt, baking powder and soda, and sugar).

Mix together buttermilk, eggs, oil, and vanilla. Stir into dry ingredients.
Beat until smooth. Add coffee gradually.
Fill 2 round pans and bake at 350 for 30 min.

Frosting:
Ingredients:
2 sticks of butter (room temp.)
1 egg yolk (room temp.)
1 t. vanilla
1 1/4 c. powdered sugar
6 oz. semi- sweet chocolate (melted)
2 T. coffee

Beat butter until light and fluffy.
Add egg yolk and vanilla. Beat together.
Add powdered sugar gradually while beating.
Add melted chocolate, and coffee.
Do not over beat. Use immediately.

Nana's Lobster Bisque

3 cans cream of mushroom soup
1 can tomato bisque
1 soup can of milk, plus 1 cup
1 cup of half & half
1 tsp. Worcestershire
A few drops Tabasco
2 cans crabmeat (Substitution: Nana uses 8 oz. pkg. lobster, plus 3/4 lb. cooked shrimp.)

Mix all ingredients, cutting lobster and shrimp into bite-size pieces. Heat until warm. Serves 4-6.

We all love this lobster bisque, a Christmas tradition at Nana and Grandpa's house. Nana doubles this recipe.

Sandie's Pecan Rolls

Easy Pecan Rolls
From the Kitchen of: Aunt Sandie


Preheat oven to 375 degrees

5 T butter
3/4 c. brown sugar
1/4 c. water
Melt together in oven

1/2 c. pecans chopped - sprinkle on bottom of pan.

2 cans Crescent rolls - Separate into rectangles. Spread with butter and sprinkle with cinnamon sugar. Roll up from short side. Cut each roll into 4 pinwheels. Set in pan - 4 to a row. Bake 20 - 25 minutes. When done turn over onto foil lined cookie sheet. - Enjoy!
